SOBA NOODLE SALAD WITH GARLIC CHIVES

You Will Need

  • 160g soba noodles
  • 2 medium carrots, julienned
  • ½ cucumber, julienned
  • 1 medium red chilli, finely chopped
  • 2 tbsp fresh ginger, finely grated
  • 1 punnet of garlic chives
  • 2 tbsp roasted peanuts, roughly chopped
  • 2 tbsp soy sauce
  • 2 tsp sesame oil (optional)
  • Juice of 1 lime

Fresh, vibrant and packed with flavour, this soba noodle salad is a light yet satisfying dish with an Asian-inspired twist. Loaded with crunchy vegetables, zesty lime, and a generous helping of garlic chives, it’s finished with roasted peanuts for extra texture and a punchy soy dressing. A perfect, balanced lunch!

Method

  1. Cook the soba noodles according to the packet instructions. Once cooked, rinse under cold water to cool and set aside.
  2. Prep the vegetables: Julienne the carrots and cucumber, finely chop the chilli, and grate the ginger.
  3. In a large bowl, combine the noodles with the carrot, cucumber, chilli, ginger, and garlic chives.
  4. In a small bowl, stir together the soy sauce, sesame oil (if using), and lime juice. Pour over the salad and toss everything together to coat evenly.
  5. Plate up and sprinkle with roasted peanuts. Garnish with extra garlic chives or a lime wedge if you like.
